Ingredients

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1/2 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 1 can (28 oz) crushed tomatoes
  • 2 cups vegetable broth (or chicken broth)
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/3 cup heavy cream (or coconut cream)
  • Optional garnish: Fresh basil, croutons, or grated parmesan

Equipment

  • Medium pot or saucepan
  • Immersion blender (or standard blender)
  • Ladle

Method

  1. Sauté Aromatics: Heat olive oil and butter in a medium pot over medium heat. Add diced onion and cook for 3–4 minutes until soft. Add minced garlic and sauté for 1 minute until fragrant.
  2. Simmer: Stir in the crushed tomatoes, broth, dried basil, dried oregano, salt, and black pepper. Bring to a gentle boil, then reduce heat and simmer for 8–10 minutes.
  3. Blend & Cream: Remove from heat. Use an immersion blender to puree the soup until completely smooth. Stir in the heavy cream until well combined.
  4. Serve: Ladle warm soup into bowls. Top with fresh basil, croutons, or a sprinkle of parmesan cheese. Serve warm!
